Our garden has a bumper crop of green beans this year. I have new respect for the freezing/canning/putting up my wife does. I spent the better part of this afternoon standing over my kitchen sink snapping the ends off of what must have been 8+ quarts of beans.
That's enough of that shit

I did 3 bushels two years ago, by myself in one weekend.
Never again.
Anymore, and i'd do some pints of pickled/spicy/garlic beans for drinking beer, but that's it.

Nuts is not realizing the beans were too mature by the time they were picked and would end up tough and stringy after all that work.

That's what green beans turn into if you leave them on the plant long enough. Let them mature until the outer "shell" starts to get yellow/tan and the beans inside look like....well, beans. Boil up those beans, mash 'em with a fork, add apple cider vinegar, butter (duh), and seasonings. I love 'em

I was a canning machine back then. Then I got tired of those marathon weekends doing stuff. Three bushels of that, three bushels of this, 4 gallons of shelled corn. I love having the stuff, but I'm getting a little wiser about product quality vs doomsday quantity. MF'n Roger cut me outta beef and sweet corn now this year.

Canning/preserving/freezing/whatever should be fun...unless you're an off gridder or Amish anyway. I love having our own produce to eat year round, but if it wasn't fun we wouldn't be doing it. I'm lucky in that my wife really enjoys canning and putting up food (probably too much, we give a lot of stuff to her kids and extended family). I'm a bit worried...we have a spaghetti squash vine that is just friggin' loaded. I'm looking forward to eating some of them fresh, but I was recently informed we'll be par cooking and freezing the rest of them We may need to do some negotiating

Those won't store in the basement? No basement, zero entry patio home. When I was a kid, Dad stored some spaghetti squash in the basement along with the butternut and other winter squash. The spaghetti didn't last near as long as the others, but did usually make it until towards Christmas or New Year as I recall.

I like fresh green beans cooked with bacon, fresh onions, and new potatoes. I just do't like the canned or frozen beans except for a few for venison soup.
My wife freezes a few. I would not bother.

Gotta eat veggies in the winter. I'd just as soon eat ours as those bought at the store. I like frozen green beans cooked up with quartered fresh 'shrooms, a big spoonful of minced garlic, a gob of butter, red pepper flakes, and some Worcestershire. Damn tasty IMO

My wife has planted enough green beans to feed an army. Last year the garden got washed out repeatedly as well as getting nailed by bunnies and deer. This spring, I moved the garden to a higher spot and fenced it in. The wife planted as many beans as she had done in previous years, but apparently we lost a LOT of them to browsing. She'll be canning hot dilly beans and freezing bags of beans for months.

Last year I planted a ton of bush green beans and yellow wax beans. Whatever beans I couldn't eat, pickle, or freeze, I let dry on the plant and then I harvested a big paper bag full for seed. After I planted this year's garden, I poked bean seeds all around the empty spaces for weed control, nitrogen fixation, and eating. My garden is a thick mess of tomatoes, squash, cukes, peppers, etc. All surrounded by a canopy of bean plants. I'm pretty happy so far with how it's turning out.

If you pick some of those mature beans before they get all dried out, you can make shell beans. I boil them with some garlic, red pepper flakes, and salt under they're tender. Then mash them into kind of a refried bean consistency. Put a pat (or 5) of butter and a bit of salt and pepper on them before eating. Fantastic

We have 30 or so pole beans planted. Lots of foliage no beans yet. Are you guys seeing any beans yet?
