Are you looking for a homemade blend one or direction to a good seasoning? I have bought from Curleys Sausages numbers of times and love what they have. As far as jalapeno and cheese. 5% of the weight is a rough amount to add for cheese. Use high temp cheese. Jalapenos? As much as you like.

I've found the best thing to add to deer sausage.... is pork. Do what biglake said and find high temp cheese made for this type of stuff. It helps a lot. When pre-cooking them it's very important to not overcook (this has more affect on taste than anything else I've done). Use a meat probe and when it hits the desired temp take them out and put in an ice bath to stop the cooking process immediately. Hope this helps some and good luck!
