You may want to call your favorite place if you drop your deer off to get butchered to find out if they are doing whole carcass butchering.
So far, Miltona Meats and KLinders are 2 that I know of that are NOT butchering deer this year. They are only taking in trim to process into sausages.
McDonalds Meats and Theilens in Pierz ARE butchering.

I saw it coming years back, both rona and CWD. This was a key part of the design for stab camp. I sent the engineers back over and over again until they came back with a design that eliminated reliance on what we knew were, at best, unreliable systems. Grid power was one of them. Grid butchering was another. So I made sure we had our own state of the art power plant and slaughter house.

We have that new shop in Henning. Oles Up nort Meats. Gonna try them this year if we get one during gun season. BUT, they are only taking deer during the gun season. Nov 7-16. Thats it.

There is a good chance they are going to be overwhelmed if the other shops won't take deer. Thanks for the heads up, If i get a deer during rifle I may go that way. I was thinking of taking a doe early and then holding out for Mr. big but that will depend on temps. Seems like things keep getting more complicated each year.

Our warm weather method for deer or Bear was to get the hide off as soon as we got the carcass back to camp. Skin, even if by car lights. Then we would be boning it out in the AM as soon as we could see, before sunrise.

I've called the local butcher a couple of times this fall. Over a year out for a beef and just less than a year for a hog. Got lucky and took a steer in on a cancellation. The hog will get done by me when the temps get cool.
Deer only processors are running just fine locally.

TT is set up with all needed to be self sufficient. Walk in cooler is 2 days from completion. With numerous hogs and whitetails, I would go broke bringing animals to a processor.
McDonald meats is out 9 months on hogs. I joked with the guy, saying I need to schedule a butcher date before my animals are even born.
Oh and Grid Power is an absolute must SD!

Every year there are a number of guys around here who "hang out their shingle" for deer butchering. I have zero idea how good or bad their butchering may be, but if a guy was in pinch it would be something to keep an eye out for.

Saw it on facebook after a friend shared their page. I've gone there two years running and will continue to use them as they have been very efficient. One of the two retired but it sounds like the other guy will have help to replace him. For $70 and 45 minutes it's tough to beat. We've also used a guy in La Valle a couple of times that does a decent job. Drive by another one with a sign out all year in his yard. I think we called him once but didn't have any luck.

I have seen this in my area as well. I am hearing it's a couple of issues.....#1 - these lockers who process wild game can NOT process OTHER NORMAL animals without a significant cleaning. #2 - people drop off the deer and never pick them up. #3 - people do not pick up their deer in a timely manner and it sits and consumes freezer space that forces them to turn other customers away. #4 - some are concerned about things like CWD, EHD and the like from wild animals.
I have seen places refusing deer of any kind, to those that will only do certain aspects of it. I have done it myself.... once....and I'll pay the $100 to have it done. I use the same locker for years so they know I pick my stuff up and pay in cash so I get a little more flexibility from them than some others do.
We have a fair share of folks that do deer only as well....but because they are not regulated by the USDA and the like you have to do your homework.
The biggest issue I see here is the opening weekend of gun surge......this tends to back the lockers up for a week or so before they will take any more. One local locker brings in a refrigerated semi trailer to hold all the deer from the surge. Anyone who complains about the price should do one themselves to see what all goes into it. The biggest issue I have is not having the room to store the de-boned meat for additional processing. Skinning and de-boning isn't that big of a deal...just time consuming. Processing and packaging is where I think you loose a lot of time.....but I also tend to be a one man show.

I've taken boneless there before and even a whole deer (really warm bow kill for mid november) but that's another place I'll never go back to. It's a shame because I like their sausage and landjaegers. But finding pieces of bone in every batch kind of turns a guy off.

I took my deer to Pierz 2 years ago. I was the last person allowed to drop a deer off. They were at capacity by I think Tuesday after opener.
Gonna be a LOTTTT of deer sitting in truck beds for a while because places are going to fill fast if a lot of butchers are opting out of the carcass break down. Maybe more will find ditches too after they hang for a week and a half and people give up. I would have to think there is a large number of people that either havent ever butchered a deer or arent proficient in any way to tackle it.
