Grill up some boneless chicken thighs. They can be done in advance. Then put them smooth side down in a baking tray. Get some fresh salsa. Strain the water from it if possible. Put the salsa on the chicken. The crevasses will hold the salsa. Add chopped olives and frozen corn. Top with cheese. I've been using shredded Parmesan because it's dryer and has a little salt to add flavor. Bake at 350 until the cheese melts. These are great the second day too.
