Are there other factors besides variety that influence when apples drop their fruit?
The tree that I cleared out some competition had dropped most of it fruits already. It was a red apple that seemed mushy already because they flattened easy when stepped on.
Helping my Brother-in-Law with some shooting lanes we found another tree just inside the woods. It was a green\yellow apple that was dropping fruit also.
Would not getting enough light stress the trees some causing them to drop?

Here in NH last year was very dry. The fruit were smaller, sweeter than normal, and seemed to ripen and in some cases drop earlier. I'd say stress from heat, dryness, too much rain, insect or disease damage can cause the dropping. Wind will cause it as well.

^^^yep. A number of environmental conditions can certainly impact fruit drop.
That said, there are plenty of varieties (wild and domestic) of apples that ripen and drop in August/early September

This tree may just be an early dropper. I first knew of its general location because the brush hog made apple sauce out the drops and that was about this time of year as well.
