How does one dry venison without making jerky? Can it be done?

We used to get I think what was called Dried Venison from Osseo Meats when I was a kid. It was sliced super thin and loved the stuff. No idea if they still make it or not.

My buddy still gets dried venny from somewhere. It is sliced thin and reminds me of corned beef. It's still moist like it's been rehydrated or something. Absolutely delicious.

I have had some from Miltona Meats and its great. I think about 4 bucks a pound to produce from your roasts. I didn't get any this year as I am trying some different sticks but it is very good.

My mom took some roasts and made dried venison and I sliced it up and it’s very good. Is it loaded with nitrates etc like jerky.? In Africa we ate lots of biltong. Strips of meat loaded with pepper to repel flies and thrown in trees to dry?

If you appreciate good food and you hunt, spend some time on this site. honest-food.net/He has a book called Buck Buck Moose. I️ believe there is some dried venison recipes in it. I️’m not home now but I’ll check out my copy Sunday and see what’s in the book. I️ briefly searched the site and didn’t see any dried recipes. But there is some very good stuff there. Just avoid the pickled walnuts!
