I was waiting for some crazy comment like that. This was deer heart. Best piece of meat on the animal. I’ve also done it with a mess of duck and goose hearts.

Deer heart doesn't survive more than a week in my fridge. I agree. Best part of the beast.

Correction. This might have been a pig heart. I have a friend whose family butchers hogs each winter. He gives me 4-6 per year. Deer, pig, beef, duck, goose, turkey hearts are all good. honest-food.net/deviled-duck-hearts/

Day 47 ish of the shutdown. I am running out of projects but cooking some great food. Thanksgiving in May. Turkey went on at 8am while I built a garden box. Wind was just right to smell it all day.

Onions, parsley and garlic in the cream cheese inside the backstrap. Tonight's the night.

Whoever it was that recommended that cream cheese / bacon wrapped deal, thank you. Fantastic.

Can I come over for dinner!?! Looking at all that bacon is painful. I just got 12 lbs of pepper bacon in bulk. Forgot it on top of the freezer.... cripes.

Bacon, cream cheese, and jalapenos are always an awesome combination on anything. Have you guys heard of cowboy caviar?
12lbs of bacon left on the freezer? Assuming it sat there a while? Might be worth trying it out on a neighbor kid first to see if it's still good. It's full of preservatives that might have saved it...

I finely diced white onions, used garlic powder, chopped parsley, coarse black pepper. 30 minutes at 400 degrees. If I added jalapeños the women in the house would not eat it. Sure was good.
