I used the chorizo recipe from this link, substituting venison for the pork. Baked the potatoes separately and then mixed with the chorizo and added some chopped cilantro. Very tasty. I’d leave the salt out of the recipe in the future. Another thing to consider about salt and sausage. Different salts have different grinds. Measuring by weight is the only way to be accurate. Measuring by volume can have a big affect on your final product.

Measuring by volume can have a big affect on your final product. Good points. Yeah it was standard table salt. I think the recipe had salt for the potatoes when they were boiled which we didn’t use. I did add the salt to the meat but, only half the amount. It just seemed a little salty so next time I’ll leave it out. Keep in mind the recipe was for tacos and I skipped that and made hash instead.
