To keep with my Hank Shaw inspired cooking, I tried rendering waterfowl fat. Hank calls geese and ducks the pigs of the sky. I pulled the fat from inside my last three geese and saved it. There is a lot of fat inside their tails. I chopped it up. Put it in a pan with some water and cooked it down. Strained it through a paper towel and put it into jars. This is supposed to be healthier than most fats for cooking. Its supposed to be healthy like grass fed beef. I have used to fry eggs for breakfast and to fry a deer steak. I will use it for more when I get some weekend time to cook.
