Flour, salt, pepper, fry. I don't dip, no sauces, no cornmeal, no eggs, just greasy hot salty fried fish. I would like to have another fish recipe that was maybe healthier or less mess to cook but after trying other things I always go back to fried.

If we're talking sunfish or other fish fry type fish: Flour seasoned with Tony Chachere's to taste, then egg wash, then panko. Deep fry in peanut oil. I like to make a dipping sauce with Franks Hot Sauce, mayo and some other shit I forget. Panko with fish is a key success ingredient... as I mentioned earlier I grind mine to a powder. All my breading that is. If anyone knows Earls cheese puffs... i grind those to a powder and mix in breading too. Give it a try. Dont be shy.. go heavy on the Earls. 👍

I'm not a sauce guy unless it's buffalo on chicken, otherwise I like my meats well prepped and perfectly cooked. Nothing to clutter it up. Here's a brisket I smoked a couple of days ago... no BBQ or steak sauce will be on a single bite of it.

I am looking for recipes easy to make and without frying fish. In summer heat, I like to put things on the grill. We put fish on aluminum foil in the grill and skinny fillets cook quickly. Butter, a bit of lemon juice, salt and pepper, and a bit of white wine or hard apple cider. Then cover with Parmesan cheese.

This works with walleye or white fish fillets. Take a glass baking dish,take fillets and lay in pan, take cut up butter tabs and lay on top of fillets, sprinkle seasoning salt of your choice. Then spread dried Durkee onion rings on top. Cover with tin foil. Bake at 325 about 20 to 25 minutes. When the fish flakes and durkee onion rings carmelize it is done. We have a recipe with butter, chopped up onion and cucumber, and fresh dill from the garden. Grill or bake with any fish fillet. Our garden dill is just starting to blossom.

Out grilling recipe has white wine, lemon juice , butter and Parmesan cheese. Hard apple cider also works. Does anyone have different grilling recipes? We use this for bass and walleyes, bigger fillets. Put fillets in a foil pack on grill, coat in old bay and lemon slices. Make a dipping sauce of mayo, old bay, and lemon juice. Hard to beat and easy to serve and clean up.

I took some customers on a walleye charter a few weeks ago and we did fish fry at their job trailer. I had never had a cornmeal base fish fry. They took fillets out of water and rolled them in corn meal. Once out of grease they coated them in this. It was pretty damn good and simple.

Love my old bay. I use it on salmon and seafood.... I have never used it on local fish. How dumb. I should incorporate some of that in our homemade breading we make. DUHHHHHH
