my grandfather gave me this advice the first time I caught a common carp....
#1 - cut 2 x 10 to length of fish. #2 - nail carp securely to board by the head. #3 - gut and scale the carp #4 - put fish, board and assorted vegetables into basting pan #5 - throw everything into oven at 350 for 35 minutes. #6 - remove the carp from the board #7 - throw away the fish and eat the board....it will taste better!

My favorite is dipping them first in flour, then egg wash and finally crushed cracker crumbs. if I have time that's my go to recipe, but shore lunch original mixed with Cajun 50/50 is very good as well. I am similar.
Dip in egg. Dip in Kellogg's corn flakes that are crushed. Fry. Corn flakes taste better on fish than shore lunch IMO.

Flour, salt, pepper, fry. I don't dip, no sauces, no cornmeal, no eggs, just greasy hot salty fried fish. I would like to have another fish recipe that was maybe healthier or less mess to cook but after trying other things I always go back to fried. I am looking for recipes easy to make and without frying fish. In summer heat, I like to put things on the grill. We put fish on aluminum foil in the grill and skinny fillets cook quickly. Butter, a bit of lemon juice, salt and pepper, and a bit of white wine or hard apple cider. Then cover with Parmesan cheese. I'm also looking for grill ideas that's why I started the thread on planks. I've got some ordered and will post results there.

My goto recipe for panfish:
Melt some butter and real lemon together, put sunfish or crappie fillets on your broiler pan, baste with melted butter mix, sprinkle with McCormick Grill-mates Roasted Garlic and Herb seasoning, put on second rack under broiler, broiler on low setting, cook about 15 minutes. No need to flip. Quick, simple, healthy and good. Do a side dish and a salad and you're good to go.
