In this case goose legs. Asain dish with shiitake, ginger, soy sauce, Hot dried peppers, green onions etc. Meat was just about falling off the bone. Goose legs are the best part of the bird.

I usually fry duck breast medium rare.
I did this recipe with a bunch of duck legs for the Super Bowl 2 years ago. Cooked 5 goose legs and it was enough for me and my wife. Plus left overs for tomorrow. The kids took a pass.
Goose breast will be jerky or maybe corned goose.

Now I should step back.... goose jerky works nice. We used to shoot several dozen snows in ND, and everyone in the group dumped them in my truck when we got back to MN.
I made jerky by the gallons and fed people at work for the winter.
