Hey guys,
My birthday is coming up and the wife keeps asking if there is anything I need. I have never sharpened a knife in my life and I feel is something that a man should be able to do! If there a kit you would recommend that has all the stones/leather/whatever else a person needs that isn't wicked expensive? I don't want anything electric. Thoughts?

In the past, I used a kit from Lansky. That worked well. Now, I have a Spyderco "Sharpmaker". I still can't make my knives shaving sharp. But they are sharper when I finish than when I start. I also can't make a decent omelette. I always end up with scrambled eggs.

If you're looking to develop a skill, go with a kit. If you're just looking to sharpen knives, get a work sharp.
Even an idiot like me can get a knife sharp with that thing.

I have a Spyderco tri-angle and it seems to do a good job.
Kooch, I figured out the problem making omelette's was in my previous pan. Once I got a decent pan I became a master. That and watching the chef at an omelette station while on vacation for 5 days straight gave me a pretty good plan of attack!

I'm a knife nut so says my wife, never without one on me and one within reach every room in the house. I must have close to 50 pocket knives from little fellas to full auto, and a good 25 belt knives. All are sharp as shit. I've always used a good tri stone and strop for sharpening. I thought I could do better and bought a few different sharpeners over the years with the latest being a Lansky 5 stone set, but find myself going back to the stone. As far as omelettes it's all in the pan. Get yourself a good stone coated pan. I've got one I won't let the wife touch.

Work Sharp with that triangle belt on it. As stated before even an idiot can get scary sharp and takes zero time to put an edge on. I use it for my 2 blade broadheads and have never hard sharper heads. Filet knives unreal sharp.

I also can't make a decent omelette. I always end up with scrambled eggs. Not the best video, kind of hard to cook and video with one hand. Trust me I can do better. Sure as shit wasn't going to ask the wife to video me doing this, she already thinks I'm nuts, so here you go. 2 oz hash browns almost done, 1 scrambled egg. Stone coated pan med high heat and a few drops of extra virgin olive oil. Edit: I could have folded but I flipped.

So, are you omlette guys saying that a good non-stick pan is like a worksharp knife sharpener? I was thinking the kind of omlette that you fold, and the good parts are just in the middle. I tried using various grit sandpaper on a mouse pad. Once a year, I gather all the knives we've got and take them here. He does them quick for a couple bucks each, while I wait. It was bad. I sent it back to spyderco for a sharpening, still a little dirty even. If I recall, they do it free. I got a hand written note back with the knife that said something like, "We like seeing our knives used. Thanks for being a customer." That was nice.

I have been working on the flip over omelette with goodies on the inside.
Current favorite is to sauté cut up celery and or asparagus just a bit so it is crunchy. Remove from pan. Pan is on low heat. Spray olive oil on it.
A bit of milk in a bowl with onion powder, salt and pepper. Add eggs and then dump in skillet. When it starts to cook like a pancake, add cut up ham, cheddar cheese, celery, asparagus and then flip the one side over the other half.
