Trying something new this fall. I saw this farm on Millennial Farmer and did some digging, and decided to give it a try. I try to eat no-till pasture critters if I can find them. Better balance of Omega 6 to Omega 3, and I like paying the grower directly. MF Schurms and I are splitting this. I plan to can the roasts, and will probably end up canning the steaks if they ain't superb over open fire. I called this outfit ahead of time to ask some questions and spoke to one of the owners. We were jaw waggin about their ancestral burger. He told me to call him back when I ordered, and he'd throw a couple pounds in for us to try. It's 90% burger, 5% heart, and 5% liver. I have my quarter angus in the freezer. That was 750.
And deeeeelicios.
Edit i just looked. At 1100 i wonder how many lbs of total meat??
I got just shy of 150 lbs.

I looked at the place too. Prices were ridiculous if i recall I have my quarter angus in the freezer. That was 750. And deeeeelicios. Edit i just looked. At 1100 i wonder how many lbs of total meat?? I got just shy of 150 lbs. He said 90-100 lbs depending on the animal. Should work out to $11 or $12/lb. I usually eat around 8 oz of meat per meal at 2 meals a day. $6/meal for heart healthy solar bison is a deal in my book. I can stretch it to 3 meals/lb if I make it into a mushroom/barley gravy over taters.

Interesting! I've only had bison burgers at the fair, never a steak or roast. Keep us updated on how it tastes. Never considered grinding liver in with the burger. I like liver but could see it not adding much taste at 5%. I am intrigued by the health/nutritional aspect of sneaking liver into daily diet. You know you can buy beef that hasn't been doctored up. Our freezers are always full of cow that wasn't hormoned, medicated, or fed with anything that was processed.

I've had bison burger and it was very good. I bet a bison rib eye would be unbelievable. How does venison or bear meat compare on the health side of things to beef and bison?

Bison Rib Eye is fantastic! The best meal I have ever had in my entire life was at a hunting lodge in South Dakota and the meal was Marinated Bison tenderloin! Incredible, they also had pheasant wild rice soup. I think I gained 5 lbs in three days after eating out there!

I'm not a nutritionist, but I have an opinion. I don't worry much on the nutritional or health side if the animal had a clean upbringing. The eye opener for me was the ratio of omega 6 fatty acids to omega 3's. Omega 6's are the ones that are killing everybody slowly. Grid beef (feedlot, chem, iron, drugs) is outrageously high in o6's, like a 57:1 ratio. Healthy is 3:1. Grass fed regen beef can come in as low as 1.5:1 and it's just as good, if not better. But, if you get an old cow off an overgrazed pasture like my dad used to give me, it's not good at all. Aside from the health benefits, I think there's also something to knowing your grower.

The bounty has been broughten. And is under armed guard. It was a little light, but overall, I’m pleased so far. Worked out to $13/lb. FedEx destroyed the coolers, but it was packed well enough to keep cold.

I had one package of grind that was torn open for some reason. So I threw that in the sink to thaw and cooked it up last night. I made a simple bison/mushroom/onion/beef broth gravy out of it. Before I mixed all that stuff into it, I tasted just the browned bison. That was damn good. I'd equate it to the best beef I'd ever had. I put in a whole onion, a half pound of fresh mushrooms, and broth until I was satisfied and thickened it up. Over taters, I can get three meals outta that. Bison protein lunch/dinner with an apple/orange and hunk of real cheese for about $6.50 ain't bad at all. I've paid way more for way less.
I hopped on the scale this morning, and I'm still at 198. I started at 221 when I got to cuttin' again in July. F'n vegetable oil, F'n biden.

I had bison burger before, as I remember the server recommended ordering it a little rarer than you would beef.
