Anyone have a good deer rib recipe? I'm thinking of trying them for the first time and I'm planning on using a dry rub with low and slow in the smoker. I might try a whole deer shoulder if I have room in the grill.
Since the ribs are thinner than pork I think they could dry out fairly easily so maybe I'll need to cover with aluminum foil.

Been a while since I've done deer ribs but I wouldn't be afraid to put them in a pressure cooker for an hour then slide them onto the grill to crisp up the edges. Dry rub before going on the grill.

I did ribs once.... I will leave it at that. I had one cooking of deer ribs that were decent. That was from a very skinny yearling doe. Maybe the pressure cooker will get the tallow out of them.

The tallow was exactly why i hated them. Left the roof of my mouth with that film. That was 25 years ago roughly. Clear memory in my head.

Going to try Sous Vide a set. 165 for 30 hours. Favorite way to do shoulders, shanks, neck roasts.
Its Arts favorite way to make those turkey thighs and drumsticks fall of the bone.

the stupid buck froze solid in my garage last night. That made butchering quite a chore. I think the low and slow shoulder will be really good if the ribs are a train wreck. I have a fresh deer, tomorrow off and a cooler of beer so I'll give it a shot-

I have a fresh deer, tomorrow off and a cooler of beer so I'll give it a shot- I shot one deer with the muzzleloader about 6-7 years ago and it froze solid overnight. That killed most of my enthusiasm for late bow or muzzle hunts. It was also in the garage.

Deer ribs aren't worth the effort in my opinion. 6 hours of smoking/ grilling and the meat was awesome, but the fat between the meat was not good. No easy way to separate the two.
It was worth a try though
