As long as I get the deer cool quick then wet age the steak in the fridge for at least 10 days they all taste the same to me. Taking care of it, and aging it. Those are the keys to me. I’ve eaten deer from Baudette to Cannon Falls to Milbank. All taste good to me and I can’t find a difference.

I can’t explain it, but I talked to my friend today and he hunts Missouri, Iowa, Minnesota. He said the meat is more tender down there, and tasted better overall. Maybe its just how old the deer is, or who knows?

My observations will make no sense. I eat deer from two opposite environments. I prefer the harsh winter stick eating deer to the crop land deer. Not sure why but there is a subtle difference. It is even crazier when I add the stick eating deer are older bucks and the crop land are does or young bucks.

One hunter on 300 + acres. My neighbor sits with a bow during the rut on his 250 acres. It’s very little pressure. It is not uncommon to see deer running on my camera in Minnesota…Just more human activity.

It's the water. If they drink tannin stained water it darkens the meat. Spring fed water and the meat is cleaner. Don't eat the meat if they have been drinking from the pig manure pit.
