Wild turkey nuggets are very good and the older birds taste just as good as the poults for the recipes I use. We bone out the turkeys and freeze each boneless breast individually or we'll eat one right away and freeze the other. Cut the meat in 3/8" thick strips perpendicular to the grain, dip in shore lunch (I use a mix of original, cajun and fried chicken shore lunch) and fry until golden brown.
I keep the thigh and wing meat to use for turkey gravy over biscuits. Bone out the meat (or you could boil with the bones on and pull the meat off later), simmer for an hour or two until tender and then add some chicken or brown gravy mix. It is delicious when you put this over some fresh baked biscuits.
I bought my oldest son and I fall turkey tags last week. Youth fall turkey tags are only $1.00, which is a much better deal than the adult tags.

Wild turkey is delicious. The best turkey I’ve ever had was a young one shot in the fall near Lake City, Minnesota. We cooked it in a roasting bag, with the stuffing and potatoes.. it was memorable!
