I forgot to take a pic at the end of the day but they were all black. Now sealed in jars with pickling spice and vinegar.

Cool! I've never heard of picked walnuts but I would try them. I have a buddy who eats picked garlic like candy.

Well, I wouldn't make them again. My first bite was just plain walnut.
After that, I ate each piece with a chunk of cheese. The cheese definitely helps with the overall experience.
They have a strong vinegar flavor. The texture of the outer shell is a little chalky and slightly unpleasant.
I put this jar in the back of the fridge to see if time helps make it better. The other three sealed jars will stay in my basement for now.
On a side note, I broke out a small package of my goose prosciutto from last year. I had vacuumed sealed it and stored in my freezer. It is still pretty tasty in my opinion. Everyone else who has tried it is split evenly between liking the prosciutto and not.
I like trying different things with game meat or foraged plants. Sometimes it works out very good and other times it sucks. Pickled walnuts at least for now are closer to the suck.
