5 hrs on the smoker at 180. Then 1 hr with sauce at 225. Pretty good!

How long in foil or no foil wrap?
I like mine when the meat is starting to pull back and you see the ends of the ribs bones starting to pop out. Granted, part of that is from wrapping tight in foil and ending up with more fall off bone, which I know some have mentioned they dont prefer.
Looks very good.

I didn't wrap in foil. Only put foil down to make cleaning the pan easier.
These were not "fall off bone" tender, but tender enough that I didn't get stringy stuff between my teeth.
I preferred the ribs with salt and pepper only (I left a couple dry), the rest of the family liked the BBQ sauce best.

Made some Cornell Chicken Marinade yesterday. Soaked the chicken over night. Made on the grill for supper tonight. Indirect cooked till internal temp was 165 then browned it. Very very tasty.

Time to bring this back up. Cranked out 25 pounds of jalapeno cheddar brats today. Fired up the mesquite grill to test a couple out and they turned out awesome.

Time to bring this back up. Cranked out 25 pounds of jalapeno cheddar brats today. Fired up the mesquite grill to test a couple out and they turned out awesome. Looks great! Any "cooked" pics? Is that 100% deer or a mix? It's 75/25 venison to pork butt and I ate it too fast for pics.
