I suck at the feel for sharpening knives by hand. What is the best out there for scary sharp but foolproof for retards like me?

For filet knives, I just buy the plain small rapala knife and stay on it with the included sharpener. I've kept those things amazingly sharp for years, but I am sharpening constantly and very lightly so I don't mash the edge.

I just use my chefs choice electric sharpener for all knives of all kinds.

I use the included sharpener and also the standard kitchen handled dowel type sharpener for 1 minute before and after use and they stay in great shape indefinitely. A guy could easily cut up any animal in north America with just a Rapala fillet knife and that cheap red sharpener. For other knives, I have the easiest and cheapest knife sharpener around. I just give my dull hunting knives to my dad and the next time he comes over he drops them off sharp.

Work Sharp 3 wheel 115v deal with the sanding belt. Sharpens my 2 blade Broadheads and fillet knifes better than any other method I have tried. I even threw the angle guide into the garbage. Wish I would have found it years ago for Broadheads. 15 minute job is down to about 30 seconds now.

For knifes I like a good steel.
I have a clamp and angle contraption (it's not a Landsky but very similar, I forget the brand). It works great but is slow, I never use it.

Here is the deal. I have the Havolon series of replaceable blade knives and they are the sharpest thing out there and love them. However, for my kitchen knives and my normal buck knife gutting knife I need something for that.

I have one of those and I suck so bad I could not get a decent edge with it at all. Did you read the directions? There is a bit of a learning curve to get a good edge. You have to build up a "burr" on the edge before moving on to the next stage.

I've tried all different kinds of sharpeners. I get the best edge using a stone and strop. My theory is if you use a dull knife long enough you'll learn how to sharpen it right.
