Rubbed and sprayed. Seal it up in a zip lock bag to soak the flavors up. Back in fridge till supper time. Then let it sizzle on the griddle. More to come.

When hash browns were about half done I slapped the steak on. Griddle temp about 500, press steak down for 10 seconds with press to get a good sear. Cook for 2-3 minutes, flip and press again. Cooked to 160-165 internal temp. YUM

125 for steak is good. Anything more is bordering on overcooked.

Several years ago my employer sent me and a couple other guys to a trade show. The hotel they put us up at was a real high price out of my range type place. normally we would go down the road to the sports bar to eat but one night we decided to eat at the restaurant in the hotel. It was a suit and tie place but because we were registered guest they let us in it was a real high class joint. I ordered a steak and when the waiter asks what type of steak sauce I wanted I told him I wanted ketchup. he tried talkin me into a steak sauce and said that the chef would be disappointed as he had several custom blends I told him know I wanted ketchup. the chef actually came out to the table with several small cuts of steak and several different types of his sauces for me to try. I tasted them and I tried them all and I told him I still prefer my ketchup. they had to send somebody over to the sports bar to get ketchup because they didn't keep ketchup it this place.
