New this year. We'll use a chain hoist. My neighbor asked me if I was expecting to shoot a moose. I like to overbuild stuff as well. Me too. Exhibit #2. Overkill.

Threaded rod all the way through the tree with giant washers and nuts. Two per tree. Hope I didn’t kill them.

I use 2 gambrels, I like to hang at least 4 days. Save yourself a few bucks and get from Fleet. The one I posted was a 6:1, that fleet one is 4:1. You have any idea how much a Cass County yearling doe weighs? I'll probably rip the tranny outta the can am. Man up and pull harder on the rope.

I use a pulley and gambrel like in the OP. Biggest issue is the rope used isn't the best for gripping especially if it's cold out. A block and tackle set of bigger dia pulleys and a larger diameter rope would be better...but more expensive. I have one of these up in the rafters of my garage with a scale on it. I should mention I actually dress my deer out at the house. I have also just used "S" hooks And hung them from the bucket on my FEL as well.

We use game gambrels and and boat winches. Easy to raise/lower deer as you skin/butcher. We also gut the deer while hanging, works well. (half of a 55 gal barrel to catch guts) Adding - sure helps as you get older and harder to move around. Occasionally a young buck in camp will gut in the field.

We plan to gut hanging this year too. We normally gut them where they die, right in the shooting lane or plot. Next come the coyotes or wolves. I doubt that’s great for continued hunting success.
This year we will zip out with an ATV, collect the deer quickly, and get out.

We pick up the deer, use otter sleds, throw deer in sled and take back to camp to hanging pole. Then take care of the messy work.
We have found that gutting while hanging is a lot better on our clothes, no bloody wet knees from kneeling, less blood stained clothes etc.

I have a meat pole set up like was posted above with two posts in the ground and a high cross timber. We could hang as many as 5 deer if needed. We use a boat winch and a gamble to first weigh and then gut the deer. We retrieve our deer with my UTV and one of those Polar Plastic tub trailers. We leave the trailer under the deer when gutting to catch all the guts. We gut much as is shown in that video that Nitro put up. That really works slick. We take a few gallons of water and a broom.......and after dumping the guts......we wash out the trailer with water and a broom so it's all set up for the next deer. Easy peasy.
I think I can gut a deer in about 10 minutes or faster with this method........and we dont foul up the kill site with too much scent. Really stay clean too. We have killed multiple deer out of the same blind the day or evening after an earlier kill. To me it's so much better than gutting in the field......and you have all the gear for gutting back at your camp.

It takes me 5 minutes to gut in the field. Just need the knife and gloves I keep in my backpack. No need to complicate it. Haven't even hung the last few deer. Just get them back and throw them in the truck. Take them to a guy near Madison. Go eat super at McDonald's. By the time I'm back he's got it all cut up and bagged up. Give him $70. Throw it in my truck and back to my place and in the freezer. Efficiency.

Regarding a "meat pole" set up. When I built our set-up.......I put the upright poles about 6 feet apart. That way you can drive a wheeler and small trailer thru the openinging. Also.....the posts need to be about 10 feet high (more is better) to enable you to get a scale and gambrel setup under the deer and trailer. Nice to have plenty of height and width. We always struggle with holding the deer still.....and usually a guy on either side will hold a leg. I think this year I will just have some ropes ready to tie the legs to both poles. Problem solved.
I have tried the head up and the head down methods for gutting deer. Either will work if you understand deer anatomy just a bit. I think the head down method as shown in that video is pretty slick and the preferred method. What used t be a sometimes messy job is now quite simple.

I've always gutted with deer on the ground, someone hold a leg. That doesn't take long and keeps everything in place until the dump out. Now, if the deer looks like a bomb went off in the guts, I'm holding the leg.

Luckily I have a very poor sense of smell so I dive right in. Probably burned it out muff diving in college.

Ranger winch around the neck if a doe, antlers if a buck, run the winch through a crotch in a tree and winch it up. Someone hold a leg and go after it. If you’re good with the knife it all falls out in one fell swoop

I hang with the four wheeler. Also hang from the rear legs so you dont stretch the hide for the mount.
