At first, I tried killing the natural yeast and adding specific yeasts. I didn’t really know what I was doing and still don’t. I am not sure if I want to get into the chemistry of making hard cider, but want to KISS. For now, making the cider and putting in the fridge for two weeks has seemed to work well. Wild yeast seems to work for me on the batch from mid September and we will see what this batch brings. How long can the cider last in the jug if put in the fridge? How thirsty are you? I had some in there for several months. I think it all depends on the yeast present and many other factors I don’t understand. In short, I don’t really know.

I made my third batch of cider today and had about a half dozen varieties of apples in it. The best cider is at least 40% chestnut crab in my view. This year was not one of my best years for cider making. I had nearly all crabs in it and it seems to bother my stomach a bit. I just thawed some mid September cider that undoubtedly had lots of chestnut crab in it. I have been concentrating the flavor by pouring off the cider as it thaws, and discarding about 1/4 of the volume as an ice cube. Much better flavor, and probably much harder on my stomach!

Eating tomatoes from the garden and crab apples also stirs things up.

I just thawed another bag of cider that must have had lots of red fleshed crabs in it. I poured off the liquid and probably reduced water content by 50%. This stuff is great! Probably the best way to deal with cider from mostly crabs. Add some vodka and have a liquer.

I talked to a guy who makes far more cider than me. He said he has a Cinnamon Crab that really helps flavor if he adds a half gallon or. So to every 5 gallons of sweet apples. I asked about size of the apple and was all set to drive over and get some scion.
He said most of his trees were not labeled and couldn’t remember which trees. I asked, could that be chestnut crab. He thinks that is it.

He thinks that is it. Never heard of a Cinnamon Crab. I have heard of Cinnamon Spice. The guy who taught the grafting workshop I attended many years ago said deer went crazy for that variety. It's borderline hardy here though.
