I talked to a guy who makes far more cider than me. He said he has a Cinnamon Crab that really helps flavor if he adds a half gallon or. So to every 5 gallons of sweet apples. I asked about size of the apple and was all set to drive over and get some scion. He said most of his trees were not labeled and couldn’t remember which trees. I asked, could that be chestnut crab. He thinks that is it. Never heard of a Cinnamon Crab. I have heard of Cinnamon Spice. The guy who taught the grafting workshop I attended many years ago said deer went crazy for that variety. It's borderline hardy here though. He has mostly Minnesota/ Bailey type trees from what it sounds like.
