I know most of you central MN guys are quite a distance from my area, but if you get desperate there's a place on Hwy 27 west of Little Falls and east of 12 Mile Tavern on the north side of the road that has their shingle out for deer processing. I tried to read the sign today, pretty sure it said $75. No idea how many they'll take but just throwing it out there.

No clue how many hunters are in KS. I guess I'm comparing it to ducks in the concept of knowing what to do with what ya killed. Most guys I know either process their own, or use a butcher out of lack of interest (not lack of ability). I could be way off base though as I'm projecting my own thought process onto others.

That's about all I could find. The only reason I bring it up is to show there's a pretty big discrepancy between states. I'd wager that well over half of MN's deer hunters live in urban or suburban areas. Hanging your deer and cutting it up in such settings can bring some odd looks at best and heated interactions with neighbors at worst.
Around here, I'd say there are very few folks who pay for someone to cut up their deer. Making it into sausage products is a different story though. Lots of people do that.

I bring mine in. I used to do it, but it was just more of a pain than what it was worth to me. If I had a nice cleaning station in the garage I might be more interested to do it myself again.

You would be pretty surprised I think. Boning out a deer is far more than taking 2 breasts off a duck and tossing the rest. I bet only 15% of hunters process their own deer...thoughts?? [br. Think the number is 50% go to processor in MN

I didn't get past this paragraph in the article. You guys are all "nimrods"!
I bet a lot more "can" butcher than do. When push comes to shove a lot will figure out how to get it done. Those who don't have the ability will either peel backstraps and walk away, or cut the head off walk away. I get the idea that city folks don't have the space or whatnot to do it, but I also have completely processed several deer on the tailgate of my truck and had them bagged in ziplocks ready for the freezer within 2hrs of shooting them. Not that hard.

On the old Q forums there used to be a lot of talk about dealing with venison in warm temps. I recall asking a guy from AL what he did. They'd quarter them up and throw them in coolers full of cube ice. They'd drain the ice as it melted and add more. Guys would do that for a week or more, then steak them out. That took care of aging as well as getting them cooled off. Seemed to make sense to me. edit...remembering more about that discussion. I believe it was Tommy Hunter (THELLC for anybody who remembers) who would drive around with the coolers full of ice and venison in the back of his pickup. He'd leave the drain plug out of the coolers and just let any water leave the coolers. Freshen the ice once or twice a day as needed and then process after "aging". I recall a bunch of southerners giving those of us up north a bunch of shit about even worrying about such a thing. The best venison I ever butchered was handled this way. It is much more work than just letting them hang in sub 40 degree temps for a week, so my laziness still makes me prefer shooting them in the cold.

I sat with a bow tonight in WC Minnesota..,I heard a lot of shots and saw many trucks on the way back. At least they can hang deer in these temps.

Butchered that fawn that committed suicide in my yard.
Got 3 lbs of backstraps and 20 lbs of trim. Deer weighed under 60 lbs dressed. Skin and head on. Haaaa. To think people take deer like that in and pay 100 nucks just to butcher it. Angus is cheaper. Haaa

Found a guy that will cut up my deer for $80. I don’t mind doing it but he does a great job and it ends up nice and clean, packaged well. Shot a doe for the freezer last evening.
