Seems most times we eat out the salt levels are way too high.

Great thing w/ sous vide is you can't overcook it. ....provided you set the right temps. Never underestimate a German/Swede. Been wondering tho.....if you precook pork chops or a steak......could you store them in the refrigerator ?(or freezer?)......and then later open the bag and char them on the grill?? (I realize it could take some microwave or other re-heat means.....prior to the grill.). Anyone doing this? I often Pre season with Johnnies when we butcher and pull from freeze to fridge for days. Easy and awesome.

Talked to our neighbor last night.
A half cow is now 1600 +/-, depending on hanging weight.
Last year this time, we paid 1450.
So basically 50 cents a lb more now(10% increase).
Middlemen to stores are making a nice killing....

How important is the vacuum seal vs ziplock. I have an Insta-pot thing that has a sous vide button on it, no vacuum sealer. Anything to watch out for that could end up dangerous? Nope

Talked to our neighbor last night. A half cow is now 1600 +/-, depending on hanging weight. Last year this time, we paid 1450. So basically 50 cents a lb more now(10% increase). Middlemen to stores are making a nice killing.... It becomes difficult to know whom is making a "killing". I think everyone is feeling the squeeze on prices. .....kinda like Joe blaming the gas stations for the high prices. lol We just bought a package of six medium Rib Eye steaks at Costco. My eyes about popped when I saw the $80 price tag. Yowsir! Crazy prices.......but cheap compared to eating that meal at a restaurant.

Usually, we either share a ribeye....or I make it go for two meals by adding some shrimp. Just cannot do as large of a cut as back in the day......and keeping the pounds off has become a big deal.

Last year we picked up some of the whole rib eye sections for $7/lb. They were about 15 pounds, so we had to slice them into one pound steaks and then freeze them like we do venison. It was a little work, but you can't beat that price. Rib eyes steak on the grill can't be beat.

Comparing three states in the past year A ribeye at the steakhouse in Minnesota was $26, Iowa $18, Maine over $40.
All three were good steaks, but the Ribeye in Iowa was the best, and bigger overall. You can eat fairly reasonable in the small town bar/restaurants in Iowa.

You can eat fairly reasonable in the small town bar/restaurants in Iowa. Hard for me to get accustomed to the menu prices these days. I somewhat just close my eyes and order what I want at times......and at other times I get che......errrrr "frugal".

It's pretty difficult to go out for burgers/beers/tip for much under $50. A year-18 months ago it was more like $35.

I pick up a half beef next week. hanging weight was 583 lbs. x 2.85 per pound. $1500 just for the meat.
Butchering and packaging is another 500 ish.....
So looking at about 1000 for a quarter. Gone are the days of 500/600 for a quarter.... that was not many years ago....
