Thanks Cat. I had looked into whites a few years back and for the ponds here in MN. I found no advantages. And since the Blacks are readily available.... that's all I've done
Side note: Fryed those crappies up last night for my daughter and her boyfriend. yum, yum. Besides yellow perch, I don't think there is a better eating fish.

Interesting. I'd put crappie below walleye, perch, gills and even northern pike on my preference list. We catch and eat a bunch of crappie but they're not my favorite by any means.

I have preferences I guess, but you put some fresh deep fried fish of any kind in front of me and I am eating it with a smile.

Any of you guys ever eat broiled lawyer? Some places call them burbot, and dem der Minneeesoooota guyz call 'em eelpout..... Every time I have eaten it, it was absolutely amazing.

Here's what I used for the brine. 4 quarts of water 1 cup Kosher salt 2 cups brown sugar 2 cups maple syrup 1/2 cup soy sauce 2 tbsp liquid smoke 2 tbsp garlic 2 tbsp onion powder 2 tbsp black pepper. I also added some molasses bacon seasoning and sriracha. I soaked for 12-14 hrs and smoked at 190 degrees for 5-6 hrs. They turned out really good and have an awesome flavor, not salty at all. Next time I will try individual filets rather than whole so more meat is exposed to the brine.

Yummy! Have you ever tried a wooden dowels and clip pins for fish smoking? Clip the tails to a rod and hang the fish. Allows the fluids to come out of the chest cavity. Plus you can really load up the smoker

That's a good idea. I have used the s clips off of rubber straps to hang meat from the top grate and that worked pretty good as well.

I am bummed reading this thread. Third year in a row lake here has been unfishable. First year 4' of snow and ice and not accessible, last two to many warm spells. This is a lake you need to drive on to get where the fish are. Ice has just been to sketchy. I might have to try some spring blue gills to fill the freezer.

Riggs you got me all fired up on smoking some fish. Spring bullheads, such a great memory....
When I was a kid, my friends dad would put us on a mission, in the spring, to catch as many of those whiskered SOB's. 5 gallon buckets full of them. He taught us a lot about cleaning, canning, and smoking fish. The best tip. "...When you guys get older and have been married for a long time, you will understand what I'm about to teach you here. Before the day of smoking begins, get a cooler, fill it with ice and 21 beers. Set that cooler out of the sun but in plain sight. Get another cooler and ice down 24 cans plus the 3 you removed from the other case. Hide this cooler behind the garage, in the garage, or somewhere your wife never goes. This will be the cooler you drink out of during the day. After the first 4 hrs or so, your wife is going to come out and look into the cooler that is in plain sight. Seeing that the cooler is still full she won't be able to nag you for drinking too much beer. No nagging, drinking beers, and being outside on a beautiful saturday, is about as good as life gets." True story. Bob passed this year. Great teacher of the cooking side of outdoor living.

Great lesson from dad mn! My dad taught me about laundry mats. Said there was a certain level of desperation at the laundry mat and a guy with a nice car could meet women pretty easily there, or was it meet easy pretty women there...
Anyway, my dad taught me to fish also and I added a post to my house and habitat thread about today's fishing. Don't want to post it twice though.
