This is an old tradition here in the northeast. You dig a large hole. Line it with rocks. Get the boys up at sunrise. Start a fire in the hole. Here's my 88 year old father inlaw right in the middle of it. Normally tge burn pile pile would not be there but it didn't get burned when it was supposed to and we weren't re digging the bean hole. After a few hours you've got a good bed of coals and the rocks are warm Get the younger guys to carry the cast iron pots filled with beans and ham to the hole. Seal the tops with aluminum foil Get out out of the way if the 88 year old step mother inlaw.

Let your brother dig out the hot coals. Place the pots in the coals. And cover with dirt and After 5-6 hours things are ready to dig up.

Do you use bone in ham or ham hocks?

Looks good, what type of beans are you using? Do you use bone in ham or ham hocks? I'm not 100% sure. They're dry beans. Soldier maybe. We used a whole ham with bone in.

Nice! That reminds me of turkey in a trash can. It was the first time they tried it. It fell apart and was moist but, I like the turkey a little dryer.

Our annual bean hole dinner is next Saturday. The hole has been dug out. The wood is cut and ready for 600am Saturday. We are scheduled for more rain Wednesday through Saturday so it will be a challenge. Photos to follow.
