I need that thin sliver taken out to form that y shape. Funny how many people dont do that. I cannot stand the thought of any bones in fish, and I dont care if cooking them softens those small middle bones like some people claim. Take the darn things out and then I am happy. I'm the exact same way. My BIL says "they cook right out." BS! I like to take them out too. But I've had them in too and as long as you fry them I've never tasted them or felt them

But I've had them in too and as long as you fry them I've never tasted them or felt them I could handle the bones but I want my kids/wife eating fish for many years to come. I try to remove any/all bones I can feel so they can enjoy eating dinner!

I am not quite that picky, but finding a bone detracts from my desire to devour every fillet in sight.
I have provided my gaurantee for many many years. When I fillet fish, I announce to the guests before we eat..... Gauranteed boneless fillets.

The thought of bones doesn't bother me, but I've had enough slide up between my tooth and gums to try to keep them out. I cut from head to tail, through the ribs, and stop short of the tail .5 inch. Flip the fillet over and skin. Then cut the rib cage out.

A 20lb-50lb fish just has to much meat there to waste, and ribs that are too thick to cut without resharpening your knife all the time. I also save the belly flap and cheeks on the big fish.
