I have been tempted to get into canning. Haven’t taken the big step yet. Don't be scared, jump in and we'll learn together.

Run down a version of ball canning book if you can. Lots of great info in them, like processing times and sizes. Once you get a few things under your belt, you'll be offroading in the creative like Foggy jumping dunes with his jeep all birdied up.
I've still got to master the chicken noodle soup concentrate. Gotta find a way to pull back on the flavor power of the chicken and carrot.

Does anyone use reusable canning lids? I saw them online but they are on backorder. People must be getting ready for the civil war.

Up until the rapture, lids and salt were the only marginal cost, and dirt cheap. Never felt the need to try 'em. Might have to give it a consideration now. I even burned through my doomsday stockpile of lids.

Jars lids, cookers are all in hi demand here. I was lucky to find some pint jars the other day and a 16qt pressure canner today so rather than borrow I bought. Picked up everything else I needed so tomorrow the adventure begins.

The only thing I have made is Plum Jelly. I made a batch of 20 pints about a month ago. The family loves it. I still have 30 Lbs of plums in the freezer so I'll be making more this winter. I purchased most of my canning equipment and supplies at Fleet farm.

No the wife had the funnel and the jar picker outer thing. I have a bubble remover head measureing thing on order. Figured the first batch I'll get by without. Ran it up to pressure today empty just to see how long it took and how it worked. Didn't blow anything up so far.

When we did sweet corn in my buddy's backyard with the propane burner, we had that thing up to pressure in a quarter of the time.

If you get into major puttin-uppery, it may be worth it to get a propane burner for the garage. Many times I've found myself dreaming about a second canner and two burners outside to really run up the output. I'm talking 36 pints every 90 minutes kind of output. Guy could have 108 jars of sweetcorn done before ma puts lunch on, and you're done with sweet corn for the next few years. I've been enjoying doing two-year batches on certain things the past few years. I've really only done it with tomato juice and green beans. I quickly realized I didn't like green beans that much after I put up almost 13 gallons in quart jars.

13 gallons of green beans, holy crap. I'm not worried about time or output, remember I'm retired, got nothing but time.

First batch of beef stew. Meat, taters, onion, carrots & celery. Turn volume up.
